Organic Calamarata – Cappelli durum wheat pasta.
Calamarata, also known in some parts of Italy as "mezzi paccheri", owes its name both to its shape, which resembles squid rings (calamari), and to the classic Neapolitan seafood recipe where squid is indeed the star ingredient.
Crafted exclusively from Italy's hallmark wheat variety—the most modern of ancient grains and the most widespread between the 1920s and 1960s, before the rise of industrial processing. A pasta made with 100% Cappelli wheat, whose tall stalks and deep roots naturally resist chemical fertilizers, making it arguably the ideal grain for organic farming.
Lower in gluten proteins and sugars, richer in minerals and vitamins, these unique qualities are held within a grain known for its aromatic, lingering flavor—a profile you will taste in every bite of our Cappelli pasta.
Slow-rotation stone-ground semolina
The organic semolina and flours used for our pasta are ground on natural millstones made from millstone grit sourced from nearby France, operating in our slow-rotation mill.
By avoiding heat buildup during grinding, our process preserves the full nutritional profile of the resulting semolina.
Bronze-drawn and low-temperature dried pasta
Bronze drawing gives the pasta a distinctive rough, porous texture that captures sauces and seasonings perfectly, enhancing the flavor of every pasta dish.
We rely on the traditional slow-drying method at low temperatures—never exceeding 40°C (104°F)—which offers substantial benefits: it protects all original wheat aromas, nutrients, and organoleptic properties, while preserving starches to ensure a more digestible, elastic pasta with an ideal al dente bite.
This approach extends our production times, but just like with all fine things made with care… we take all the time needed to craft them to perfection.
Sourced from a 100% in-house, certified organic supply chain
Our entire organic supply chain is rooted in the green rolling hills of the Umbrian Apennines, and above all, it is strictly internal.
This means we maintain direct, total quality control over every step of production: from sowing to harvesting, and from milling to packaging.
This guarantees an added layer of integrity on top of certified organic standards: no synthetic chemicals, no flour improvers or preservatives—only deep respect for the land, safety, and authentic, wholesome food.
