Ditalini – Soup Pasta – “Classic” Durum Wheat Semolina Pasta
Ditalini—one of our pasta shapes designed for soups—are crafted from a blend of organic durum wheat grown in our own fields.
For those who love the traditional taste of pasta but refuse to compromise on safety, nutritional richness, or the authentic flavor of organic ingredients.
Slow-rotation, stone-ground semolina
The organic semolina and flour used for our pasta are ground using natural stones—specifically millstones made of French millstone grit—in our slow-rotation mill.
By avoiding heat buildup during the milling process, we preserve the full nutritional integrity of the resulting semolina.
Bronze-die extruded and low-temperature dried
Bronze-die extrusion gives the pasta a rough, porous texture that holds sauces and seasonings exceptionally well, significantly enhancing the flavor of the finished dish.
We employ a traditional low-temperature drying process (max. 40°C), which offers major benefits: it preserves the flavors and the nutritional and organoleptic properties of the original wheat, as well as the starches that make the pasta more digestible, elastic, and pleasant to the bite.
This approach requires more production time, but—as with all good things made with love—we take the time needed to craft them to perfection.
Sourced from an in-house, certified organic supply chain
Our entire organic supply chain is based in the green hills of the Umbrian Apennines; crucially, it is an exclusively in-house operation. This means we have full control over the quality of every stage of production—from sowing to harvesting, and from milling to packaging.
This offers an additional guarantee alongside the traditional values inherent in organic farming: no chemical treatments, no additives or preservatives, respect for the land, and the safety and wholesomeness of the food produced.
