Organic Strangozzi – "Rustic" durum wheat semolina pasta.
Originating from the Spoleto and Foligno area, *strangozzi* are one of the most iconic Umbrian pasta shapes, also popular in the neighboring Marche region. Their name—*strangozzi* or *stringozzi*—is thought to derive from their square cross-section, resembling leather shoelaces.
Umbrian *strangozzi* were a must-have addition to our organic pasta range; they are crafted using a rustic semolina that enhances their distinctive "bite" and texture.
Hand-dried (giving them their characteristic shape), they possess exceptional porosity, allowing them to hold sauces perfectly. They are made from a blend of organic durum wheat grown in our local fields.
Experience the full nutritional richness of semi-whole grain flour in a traditional, aromatic, and character-filled Umbrian organic pasta.
Slow-rotation stone-ground semolina
The organic semolina and flour used for our pasta are ground using natural stones—specifically millstones made of French millstone grit—in our slow-rotation mill.
By avoiding heat buildup during the grinding process, our method preserves the nutritional integrity of the resulting semolina.
Bronze-die extruded and low-temperature dried pasta
Bronze-die extrusion gives the pasta a particularly rough, porous texture; these qualities allow it to hold sauces and seasonings effectively, significantly enhancing the flavor of the finished dish. We employ the traditional low-temperature drying process—never exceeding 40°C—which offers significant benefits: it preserves the flavors and the nutritional and organoleptic qualities of the original grain, as well as the starch structure that makes the pasta more digestible, elastic, and pleasant to the bite.
This approach requires more production time, but—as with all good things made with love—we take the time needed to craft our products to the highest standard.
Sourced from an in-house, certified organic supply chain
Our entire organic supply chain is based in the green hills of the Umbrian Apennines and, crucially, is managed entirely in-house.
This means we maintain full quality control over every stage of production, from sowing and harvesting to milling and packaging.
This offers an extra layer of assurance alongside the traditional values inherent to organic farming: no chemical treatments, no additives or preservatives, respect for the land, and the safety and authenticity of the finished product.
