Ideal for hearty, thick, or seafood-based sauces, thanks to their tubular shape that captures the sauce.<br \/>\nAll the nutritional richness of organic semolina in a pasta full of character and aroma.<\/p>\n<p><strong>Slow-rotation stone-ground semolina<\/strong><br \/>\nThe organic semolina and flour used for our pasta are ground using natural stones\u2014specifically millstones made of French millstone grit\u2014in our slow-rotation mill.<br \/>\nBy not heating the grains during the milling process, we preserve the full nutritional integrity of the resulting semolina.<\/p>\n<p><strong>Bronze-die extruded and low-temperature dried pasta<\/strong><br \/>\nBronze-die extrusion gives the pasta a particularly rough, porous texture; these qualities allow it to hold sauces and seasonings effectively, greatly enhancing the flavor of the finished dish.<br \/>\nWe use a traditional low-temperature drying process (max. 40\u00b0C), which offers significant benefits: it preserves the flavors and the nutritional and organoleptic properties of the original wheat, as well as the starches, making the pasta more digestible, elastic, and pleasant to the bite.<br \/>\nThis approach requires more production time, but\u2014as with all good things made with love\u2014we take the time needed to craft them to perfection.<\/p>\n<p><strong>Sourced from an in-house, certified organic supply chain<\/strong><br \/>\nOur entire organic supply chain is located among the green hills of the Umbrian Apennines, and, above all, it is an exclusively in-house operation.
