This allows it to hold sauces and seasonings effectively, significantly enhancing the flavor of the finished dish.<br \/>\nWe employ a traditional low-temperature drying process (max. 40\u00b0C), which offers significant benefits: it preserves the flavors and the nutritional and organoleptic properties of the original wheat, as well as the starches, making the pasta more digestible, elastic, and pleasant to the bite.<br \/>\nThis approach requires more production time, but\u2014as with all good things made with love\u2014we take the time needed to craft them to the highest standard.<\/p>\n<p><strong>Sourced from an in-house, certified organic supply chain<\/strong><br \/>\nOur entire organic supply chain is based in the green hills of the Umbrian Apennines; crucially, it is an exclusively in-house operation.<br \/>\nThis means we maintain full quality control over every stage of production, from sowing and harvesting to milling and packaging.
