{"id":219,"date":"2026-10-13T13:51:53","date_gmt":"2026-10-13T12:51:53","guid":{"rendered":"https:\/\/ourlandgoodfood.com\/shops\/capoccia\/?post_type=product&#038;p=219"},"modified":"2026-10-13T13:51:54","modified_gmt":"2026-10-13T12:51:54","slug":"caserecce-rustica-organic-semi-whole-wheat-pasta","status":"publish","type":"product","link":"https:\/\/ourlandgoodfood.com\/shops\/capoccia\/product\/caserecce-rustica-organic-semi-whole-wheat-pasta\/","title":{"rendered":"Caserecce, \u201cRustica\u201d organic semi-whole wheat pasta"},"content":{"rendered":"<p><strong>Caserecce \u2013 &#8220;Rustica&#8221; organic semi-whole wheat pasta<\/strong><br \/>\nCaserecce made from semi-whole wheat flour, using a blend of organic durum wheats grown in our own fields.<br \/>\nAll the nutritional richness of semi-whole wheat flour captured in an aromatic organic pasta with real character.<\/p>\n<p><strong>Slow-rotation stone-ground semolina<\/strong><br \/>\nThe organic semolina and flour used for our pasta are ground using natural stones\u2014specifically millstones made of French millstone grit\u2014in our slow-rotation mill.<br \/>\nBy avoiding heat buildup during the grinding process, we ensure that the nutritional qualities of the resulting semolina remain intact.<\/p>\n<p><strong>Bronze-die extruded and low-temperature dried pasta<\/strong><br \/>\nBronze-die extrusion gives the pasta a particularly rough, porous texture; this allows sauces and seasonings to cling effectively, greatly enhancing the flavor of the finished dish.<br \/>\nWe employ a traditional low-temperature drying process (max. 40\u00b0C), which offers significant benefits: it preserves the flavors and the nutritional and organoleptic properties of the original wheat, as well as the starches, making the pasta more digestible, elastic, and pleasant to the bite.<br \/>\nThis approach requires more production time, but\u2014as with all good things made with love\u2014we take the time needed to craft them to perfection.<\/p>\n<p><strong>Sourced from an in-house, certified organic supply chain<\/strong><br \/>\nOur entire organic supply chain is based in the green hills of the Umbrian Apennines and is, above all, an exclusively in-house operation.<br \/>\nThis means we maintain full quality control over every stage of production, from sowing and harvesting to milling and packaging.
