{"id":227,"date":"2026-10-13T14:03:43","date_gmt":"2026-10-13T13:03:43","guid":{"rendered":"https:\/\/ourlandgoodfood.com\/shops\/capoccia\/?post_type=product&#038;p=227"},"modified":"2026-10-13T14:03:43","modified_gmt":"2026-10-13T13:03:43","slug":"paccheri-rustica-organic-semi-whole-wheat-pasta","status":"publish","type":"product","link":"https:\/\/ourlandgoodfood.com\/shops\/capoccia\/product\/paccheri-rustica-organic-semi-whole-wheat-pasta\/","title":{"rendered":"Paccheri, \u201cRustica\u201d organic semi-whole wheat pasta"},"content":{"rendered":"<p><strong>Paccheri \u2013 \u201cRustica\u201d organic semi-whole wheat pasta<\/strong><br \/>\nPaccheri made from semi-whole wheat flour, using a blend of organic durum wheat grown in our own fields.<br \/>\nAll the nutritional richness of semi-whole wheat flour captured in an aromatic organic pasta with real character.<\/p>\n<p><strong>Slow-rotation stone-ground semolina<\/strong><br \/>\nThe organic semolina and flour used for our pasta are ground using natural millstones\u2014crafted from French millstone grit\u2014in our slow-rotation mill.<br \/>\nBy avoiding heat buildup during the grinding process, our method preserves the full nutritional integrity of the resulting semolina.<\/p>\n<p><strong>Bronze-die extruded and low-temperature dried pasta<\/strong><br \/>\nBronze-die extrusion gives the pasta a uniquely rough, porous texture; this allows it to hold sauces and seasonings perfectly, vastly enhancing the flavor of the finished dish.<br \/>\nWe employ a traditional low-temperature drying process (max. 40\u00b0C), which offers significant benefits: it preserves the flavors and the nutritional and organoleptic properties of the original wheat, as well as the starches that make the pasta more digestible, elastic, and pleasant to the bite.<br \/>\nThis approach requires more production time, but\u2014as with all good things made with love\u2014we take the time needed to craft them to the highest standard.<\/p>\n<p><strong>Sourced from an in-house, certified organic supply chain<\/strong><br \/>\nOur entire organic supply chain is based in the green hills of the Umbrian Apennines and, crucially, is managed entirely in-house.<br \/>\nThis means we maintain full quality control over every stage of production\u2014from sowing and harvesting to milling and packaging.
